12 Salads for Spring
Y’all have NO idea how happy I am for Springtime! We have so enjoyed getting outside and playing so much after such a seemingly long winter!
I have a little secret to tell you guys. I am signing up for my first ever 5K race for the beginning of summer. I am running it with my daughter and my sister and I am PUMPED! Now since I put it out there, y’all have to keep me accountable! #peerpressure #thegoodkind
With the warmer weather, I start CRAVING salads. All kinds of salads. It’s just too warm to come inside from a jog or from playing soccer with the kids and eat a hot meal. So a lot of days for dinner we are eating cold salads. I do most of the prep work and chopping the night before or when I am cleaning up from breakfast or lunch, then all I have to do is toss everything together for dinner. It saves so much time! That way we can stay outside longer. Oh, and is it just me or do kids eat AND sleep better after an afternoon spent playing outside with friends? Mine certainly seem to!
Here are 12 of our favorite salads – don’t worry, one of them has french fries and another one is a dessert. I’m not gonna go all crazy healthy on you guys!
Little King Salad – This is my latest salad obsession. It is everything you love about an Italian Sub, in salad form. Watching your carbs? Just leave off the chunks of bread and you won’t even miss it!
Corn & Avocado Salad – This is a great side dish for Mexican night! I love to dip tortilla chips in it!
German Potato Salad – My most requested Springtime potluck recipe. Good hot or room temperature.
5 Ingredient Cherry Pecan Chicken Salad – I can’t say enough good things about this simple recipe. It’s really a great combination of flavors.
The Best Broccoli Salad – A classic for a reason!
Pittsburgh Salad – Steak and fries in a salad? Enough Said. We usually make this with leftover steak. (When we have leftover steak. #HardlyEver?)
Southern Pecan Chicken Salad – This is my mama’s classic chicken salad with a little twist. She makes hers without the pecans, but now that I have tried it with them, I’m hooked.
Aunt Bee’s World Famous Taco Salad – My daughter nicknamed this recipe. ‘world famous’ years ago. And it stuck. It’s really, really delicious. Give it a try even if you don’t like Catalina dressing. (We don’t usually like Catalina dressing either!)
Southwest Steak Salad with Cilantro Lime Buttermilk Dressing – I could eat this for dinner, every night for at least a month. It’s that good.
Creamy Parmesan Spinach Salad with Grilled Chicken – My daughter actually prefers spinach over lettuce so this is her favorite one on the list! I adore this dressing!
Sweet & Tangy Spinach Salad with Creamy Balsamic Vinaigrette – This is our ‘go to’ date-night-in side salad or a great dinner salad topped with grilled chicken!
Snicker’s Apple Salad from An Affair From The Heart – Yep, I found a way to slip a dessert in a Salad round up. This one is AWESOME!
